Here are a few plants that do well in terrariums:
Herbs:
Bunchberry,
Corsican Mint,
English Box (dwarf),
Ebony Spleenwort (fern),
Foamflower,
Gotu Kola,
Goatsbeard (dwarf),
Herb Robert,
Maidenfair (fern),
Miniature Roses,
Patridgeberry,
Sweet Woodruff,
Violets (Canada, Laborador, Parma and Sweet).
Non-herbs:
Swedish ivy
English ivy
Maidenhair fern
Anthurium
Miniature begonia
Peperomia
Pilea
Podocarpus
Creeping fig
Baby's tears
Wintergreen
What you need:
The materials needed are: pea gravel, activated charcoal, sphagnum moss and potting soil. Make sure your container is clean and dry before starting.
Cover the bottom of the container with about an inch of pea gravel. If the terrarium is especially deep, you can use up to 3 inches of gravel. This bottom layer ensures good drainage.
Spread a thin layer of activated charcoal (the type used in aquariums) all over the gravel to act as a detoxifier. Next, put a thin layer of sphagnum moss over the charcoal; this will keep the soil from drifting down into the bottom layers.
Finally, spread a couple of inches of the actual planting medium.

Somehow I think I could even deprive self sustaining plants. I don't have a green thumb.
Your terrariums look gorgeous! The moss terrarium just looks especially lush.
